Tasting Notes
Visual: Bright and intense salmon colour, with hints of peach and coral. A steady and persistent effervescence leaves a delicate pearl robe along the edges of the glass. Nose: Intense, fresh and aromatic, the effervescence carries aromas of strawberry, raspberry and hints of ripe stone fruit. The second nose follows through with a mineral core that flirts with hints of toasty brioche and fresh cream. Palate: The attack is a dance between fresh fruit aromatics and tight delicate bubbles. The fruit character carries to the midpalate where the mousse releases, filling the mouth with secondary notes of wildberries, fresh toast and a touch of wildflower. The finish is a balance between fruit, tension and supple bubbles which continue to linger and develop urging you to have another sip.
