A méthode traditionelle sparkling wine from an ideal vintage. 100% Vinemount Ridge appellation • 2019 vintage was cool in the beginning but led to a beautiful fall, making it an almost ideal sparkling wine vintage • Hand-picked early in the morning to preserve freshness • Gently whole cluster pressed to extract the finest juice with minimal colour • Result is red fruit aromatics with only the slightest pink tinge, and white wine characteristics on the nose • Base wine was fermented in stainless steel and aged without lees for 5 months before bottling 18 months on lees in bottle to ensure a fine mousse without excessive brioche/yeasty character • Fresh minerality with complex aromatics showcasing the terroir and vintage • No dosage used
