Reserve Chardonnay 2019
Hand-harvested and cluster-sorted to ensure only the best fruit made it to tank. A smooth and luscious wine with notes of ripe citrus and a light touch of buttered cream. Oak spice and vanilla provide a structured backbone to a delicious medium-bodied wine.
Grapes are a combination of old vines and young vines, all under the control of our Vineyard Management team. The grapes were hand harvested and sorted before being whole cluster pressed using a soft press cycle to extract only the finest juice. The juice was cold settled in stainless steel tank to remove the heavy solids, then the clean juice was transferred to 500L French oak barrels and a concrete tank for fermentation. Two different yeast strains were used for fermentation, both cultured from some of the finest Chardonnay vineyards in the world. After fermentation, a partial malo-lactic fermentation was done, but was arrested before completion so we didn’t lose the freshness of the wine. The wine was aged in on fermentation lees, with no stirring of lees, for 11 months at which point we created a blend from the best barrels and concrete tank. The blend was racked off the heavy fermentation lees and transferred to stainless steel barrels for an additional 6 months of aging on light lees. The extended aging in steel barrels harmonized the blend and added complexity without the risk of over oaking. The goal was a wine that was textural and complex with a balanced acid and minerality. The wine should be fresh but layered.

Try this wine with a crisp-roasted chicken or turkey breast. Also great with grilled salmon and tuna. Soft cheeses, especially Brie and Camembert.
